Grind

Burrs, settings, and the slow business of finding out what changed.

Seasoning new burrs, or waiting out the first two kilograms

I replaced a set of burrs that had done something like eighty kilograms and expected an immediate improvement. What I got instead was a week of cups that were flatter than before, with a dry finish I had not had in months.

Everything I could find said to run two kilograms through before judging anything. I ran about two and a half, mostly stale beans I had been meaning to throw out, and somewhere in the second kilogram the finish cleaned up.

I have no idea whether the burrs changed or I did. What I do know is that I nearly sent them back on day four, which would have been a mistake.
